We can ask a waza in Srinagar for a date. We do not pretend a hotel breakfast is a wazwan.
Guests sit on the floor in fours around a large copper plate, the trami. Before the meal, a basin and jug, the tash-t-nari, is brought around so people can wash their hands. The cook in charge is the vasta waza. The meat is mostly lamb, prepared with fennel, dried ginger, and Kashmiri chilli.
Tabakh maaz is lamb ribs cooked with yoghurt and then fried. Rista is a pounded meatball in a red gravy. Rogan josh is lamb braised with chilli. Gushtaba, meatballs in a yoghurt gravy, is served last and signals the end. A traditional count is 36 dishes. That is a feast ordered ahead. A restaurant will serve a shorter set. We will not name a place as the one to choose, and we will not print a per-head rate.
Only as an extra in Srinagar, if the waza has the evening free. It is not included on the budget, summer, or winter quotes. Tell us the date and the number of people, in multiples that fit a trami, before we ask.
A classic wazwan is a meat meal. If you need a vegetarian or Jain table, say so. It is a different order, not a wazwan with the meat removed.
For a full trami, yes. A single plate in a restaurant may be possible the same day. We do not promise that.
